No-Bake Vegan Oat & Raisin Bars (Nut-Free)

Introduction


When life gets busy and I find myself reaching for something quick to eat, unless I have prepared in advance, I don't usually make the right choice. These no-bake vegan oat and raisin bars are quick, wholesome snacks that I can prep in advance.


These oat bars are one of my go-to recipes because they’re simple, filling, and made with everyday ingredients I always have in my kitchen. They’re naturally vegan, nut-free, and use raisins or sultanas for a burst of natural sweetness. Perfect for work lunches, an afternoon pick-me-up, or even a light breakfast on the go. Or just because they taste so good!!

What I love most is that they’re no-bake – meaning no oven required, less washing up, and they come together in under 15 minutes. Pop them in the fridge to set, and you’ve got healthy homemade snack bars ready for the week... If you can make them last that long.


Nutritional Benefits


  • Oats – A fantastic source of slow-release energy, fibre, and beta-glucans, which support healthy cholesterol levels and keep you feeling fuller for longer.

  • Raisins/Sultanas – Naturally sweet, packed with antioxidants, potassium, and iron. They also help satisfy a sweet tooth without refined sugar.

  • Seeds (sunflower or pumpkin) – Provide protein, healthy fats, and important minerals such as magnesium and zinc.

🌱 No-Bake Oat & Raisin Bars Recipe


Ingredients (makes 10–12 bars)


  • 250g (2 ½ cups) rolled oats

  • 120g (¾ cup) raisins or sultanas

  • 100g (½ cup) sunflower seeds or pumpkin seeds (optional for crunch)

  • 2 tbsp ground flaxseed (or chia seeds)

  • 125ml (½ cup) maple syrup or agave syrup

  • 80g (⅓ cup) sunflower seed butter or tahini (to bind)

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt


Method


  1. Prepare the tin – Line a 20cm (8-inch) square baking tin with parchment paper.

  2. Mix dry ingredients – In a large bowl, combine oats, raisins, seeds, flax, cinnamon, and salt.

  3. Heat wet ingredients – In a small pan, gently warm the maple syrup and sunflower seed butter/tahini until smooth and combined. Stir in the vanilla.

  4. Combine – Pour the wet mixture over the dry ingredients and mix thoroughly until everything is coated and sticks together.

  5. Press into tin – Transfer the mixture into the lined tin, pressing it down firmly with the back of a spoon.

  6. Chill – Refrigerate for at least 2 hours (or freeze for 30 minutes) until firm.

  7. Cut into bars – Once set, lift out of the tin and cut into 10–12 bars.


Storage


  • Store in an airtight container in the fridge for up to 1 week.

  • Freeze individually wrapped bars for up to 2 months.
